Until today, Frank Pepe?s Pizzeria Napoletana still make their pizza the conventional way ? in a coal-fired oven made of bricks. Built in 1925, the traditional pizzeria is very popular in all of America but particularly to the neighbourhood of Wooster Square in New Haven. The founder of the restaurant is Frank Pepe, an Italian who immigrated to the United States in the early 1900?s at a very young age of 16. With enough working experience, he established his own bakery, but later closed it and started a pizza parlor with his wife instead. At first, they only offered two types of pizza, but later on created the New Haven thin crust pizza. Today, people visit the restaurant for the ?White Clam Pizza?, Pepe?s signature pizza.
