They taste simply divine if they are basted well and roasted just right.
I love roasted potatos, roasted carrots, roasted yams, and of course, roasted parsnips fer crying out loud!!
Just add turkey, stuffing, cranberries and gallons of gravy and you're good to go.

I can't recall ever having parsnips. The rest of it looks/sounds great.

The parsnip is to carrots what the sweet potato is to spuds.
I use then a lot in soups and stews, and whenever I get the chance, I roast the buggers too!

In my mind they are just white carrots.
I do a roasted root vegetable dish with parsnips potatoes and fresh beets.
I always have to look up beets. Once of these days I'm going to type carrots potatoes and funky bass lines.

Haha. I can't stand beets. It's one of the very few things I have a real aversion to. My wife loves them.
If she has any on her plate at dinner, I leave the room.

I'm the same way about liver. I don't care how much anyone likes it, I don't care how good it is with onions. If it's cooking I won't even go in the house. When you're done open the windows, turn on the fans, I'll be back after I eat out.
