Momofuku (any member of the empire). David Chang still produces a great meal after all these years. And it's really on the Lower East Side (unlike many of the restaurants mentioned so far). I disagree strongly about the bagels at Russ and Daughters. It's not the bagels that are good -- in fact they are really weak and are NOT baked on premises. It's the fish that is amazing. So good that you don't notice the sub-par bagel. A super Heeb is a revelation.

For a quick bite, there's a relatively new place (2 years old, maybe) on Ludlow between Stanton & Rivington called Mikey's Burger. It's awesome, and the price is great, too.

For a sitdown casual place, Vaselka on the corner of 8th
St / 2nd Ave is incredible. Don't pass them up!

Kate's Joint on East 4th and B is great for the vegetarians and vegans out there. Not technically LES, but close enough.
