Tia Rosa in Mesa is pretty decent. Honestly the best Mexican food I've had is the food truck that came by my work every morning.

Cien Agaves has some pretty amazing tacos plus they have a Habanero margarita if you like it spicy. The AZ Taco Festival is this Saturday at the Waterfront in Scottsdale from 10-5. Just about every Mexican restaurant in town will be there.

I like Nandos off Baseline and Val Vista in Mesa, Serrano's in downtown Chandler. For a quick meal, (and the best chips) it's Someburros.

Richardsons on N 16th is great ( and HOT ) but it kinda falls in the New Mexico style of dishes.

Out on the west side in Peoria or Sun City is a mom and pop place called Nino's. It is on Grand Ave and about 110 Ave. Great Mexican food at a good price.
Note: They are closed on Sunday.

Since noone has mentioned it : MANUEL's. There are several locations around town. I can personally recommend the locations at Cave Creek & Sweetwater, Phx. ; 28th St. & Indian School Rd.,Phx. ; Broadway west of Hardy,Tempe. Good family atmosphere, fantastic family owned restruant. Reasonable pricing,Large portions, never ending salza & chips and drinks( non-alcoholic). GREAT place to eat!!
