It sounds like Denver would be a good fit. It's not a face-paced city compared to NY or SF or LA or something, but face-paced if you compare it to Boulder (or Oahu I suppose). It does get cold, but...

You could always head up to Boulder and hike in the Flatirons, Mt. Sanitas, or up BOulder Canyon a ways. These are relaly nice, quick access hikes.
