As far as stainless or aluminum, it's your call. I guess it depends on how much you want to spend. Like I said, if you take care of aluminum (don't bang it around too much), it'll last forever.

I do it both ways and there's absolutely no difference in the finished beer. If I need a keg carbed quickly I'll force carb. If I have time to let it sit, I'll prime the keg with sugar.

I'm not sure what they charge at these brew your own places, but you could probably buy the basic equipment and brew it at home for not much more money.
