A smaller up and coming town would be my vote! Some place like Burleson, Buda or Kyle. Not those specifically; but those are towns that are just starting to grow (with the exception of Burleson~there and Mansfield have just exploded in growth and all the corporations have set up shop) IMO, I like to find those 'hole in the wall' places that aren't stuffy and beautifully decorated. I get messy when I eat ribs, I wear jeans and a t-shirt! I want to feel at home! Also, in Texas you have to travel around and put your food out there, County Fairs and Cook Offs, etc. One thing to keep in mind is people here will drive and make a day trip to go eat some good BBQ!
If you are interested in opening a business I would recommend the City of Arlington. It is more family oriented then Dallas, and has more available financial incoming capital then Fort Worth.
I would think anywhere on 35 between Austin and San Antonio would do well.
I agree with xjcruiser, but I would actually expand the area. You could pretty much put a good BBQ place anywhere along I-35 from Denton to SA and do pretty good. I'd make sure its next to a gas station so you'll get more traffic. JMTCs.
Let us know if you decide to pursue this. I'm always down for good BBQ, and Texans are definitely up for driving to find it. The closest Rudy's to my house is about 1.5 hrs away and I make the trip regularly.
