Easter jeep safari is a great time to go, there are a lot of people but if you get into a sticky situation most will be glad to help you out.

Milt's is another great place to eat, its a small not so fancy little diner, we live just up the road from it and they have great burgers its located at the corner of 400 East and Millcreek Drive. From Main Street, head East 4 blocks to 400 East, and you will find Milts 3 blocks South of Center Street or if your on your way to Fins & Things and Hells Revenge you'll likely pass it. There closed right now for the quite season but I can't wait to get an Aloha burger when they open

There are some good places to camp along the river just outside of Moab.
I have camped at Big Bend several times. Great scenery and it's cool camping close to the river.

I recommend the Hampton Inn in Moab. I stayed there for a week, and it was great. Really nice hotel, super clean rooms, free continental breakfast, and warm fresh cookies in the evening. Also the hot tub was great after a long day hiking, mountain biking, and Jeeping.

Every restaurant I tired in Moab was great.

For mountain biking supplies and rentals, Poison Spyder bike shop was great.

If anyone is looking for a good place to rent modified jeeps, my friend owns CliffHanger JeepRental! It's right off main street in the middle of town.

I love the brewery, such good food!

Also If u would like a more adventurious camping location, I love going out to Onion Creek. It's free and is about 15-20 min drive south down the colorado river. Its got great sandy spots for tents and there is a creek that the dirt road crosses (you drive through it) 30+ times. There is great hiking and exploring there on the red rock. Two thumbs up!
