I usually have good luck with the smaller espresso stands. There's one right near my office called "Coffee Shack" that's always good. They do cold shots for frappes, and have fresh baked goods sometimes.
If I'm out of town I never hesitate to stop in to the small places, Starbucks is too cold and uninviting, despite their facade.
A new place just opened up closer to work, the Portside Cafe next to the Clipper Victoria Ferry at Pier 69. They serve Cafe d'arte and it's pretty decent.
I've sworn off Starbucks ever since Howard Schultz doomed the Sonics! The positive is, I found the best coffee in town while avoiding Starbuckies. It's Caffe Migliore, 1215 4th Ave. The Best!
Although I don't drink the stuff, I have it on good authority that Tim Horton's coffee is better than anything found in Seattle! (but you have to cross the 49th parallel to get it!)
