Not sure if it's a state park, but Barton Springs is awesome.

Pace Bend in Spicewood has a good boat ramp and at least a couple of spots where you can fish from the shore and eat in the shade.

TPWD: McKinney Falls State Park

Been told you can fish there, but I've never caught anyhting.

McKinney Falls or Live Love Paddle I also heard they do a great bat trip in Austin!

Bastrop and Beuscher St Parks to the east. ( about an hour).
Pedernales falls (1 hour) and Enchanted Rock (2 hours) to the west.

Inks Lake State Park (about 90 mins NW of Austin) is a nice little spot... especially if you're tent camping. The RV area is a little too closely packed.

Parks

Loads of good ones!
McKinney Falls in the SE
Pedernales and Hamilton Pool in the SW
Pace Bend on the Austin side of the Lake
If you want to drive:
Colorado Bend is Awesome(Beautiful and cold chain of Natural pools and a 160,000 year old water fall)
Best place to camp is Hill Country NSA (totally primitive)

There are way to many to list, it all depends on when you want to go.

I have been to Inks SP and Bastrop SP, both are great parks. Inks has the lakes and Bastrop has the pine trees. I have also visit Canyon of the Eagles park. It has many trails and access to Buchanan lake.

Growing up I was fortunate enough to see the Eagle migration every year. It was amazing.
