Like I said I am doing end on end brewing. I started with a commercial pack over a year ago. At the end of fermentation I transfer to a keg to lager. I keep some of the yeast from the batch in a pickle jar and add water, about half and half, and put it in my fridge (just as I do the sourdough). I then brew another batch. When I am done I put the stuff in the pickle jar back into the wort and start over.
I keep two or three pickle jars mostly from my lager, ale and wheat yeasts. And yes I have left it in there for months before I brewed another batch. I often make more then one jar and sometimes I mix them together. I do not know if it is doing anything because what I have in one jar is the same strain as in another. And yes my yeast has mutated to a stable yeast.
