Iconic Buffalo Food - Buffalo, New York

There are lots of threads about the best wings, etc.

How about one thread to discuss all the iconic Buffalo food? I don't mean where we can argue about "duff's vs. anchor bar," but rather a place where everyone can post their favorite foods from the area. If you had a friend come to town from out of state, (or even another country), what foods would you make sure they got to sample?

Conversely, if you were to finally get sick of the snow and sports teams and move to say, North Carolina, what classic WNY foods would you make sure you could cook before you moved?

Beef on Weck is a classic.
I like Southern Tier brewery, that's western NY.

Oh, and the saleen (sp) hot dogs!

I'll throw in mighty taco. friday fish fries. not that they are totally Buffalo but Texas Hots here seem to be a little different than anywhere else. Same thing for pizza
