Holiday Recipes

The holiday season is coming up, anyone have a regional recipe they wanted to share? I do all the cooking, if you post it an I make it, I'll take pics and critique it. I love food from all over the world, so lets give it a try.

TEXAS CAVIAR

1 lb. dried black eyed peas
1-2 c. Italian dressing
2 c. diced green peppers
1 1/2 c. diced onion
1 green onion, finely chopped
1/2 c. chopped or shredded jalapeno peppers
1 (2 oz.) jar sliced pimientos, drained
1 tbsp. finely chopped garlic
Salt & pepper to taste
Avocados (optional)

Soak peas in water 6 hours or overnight; drain. In a large saucepan, cover peas with water and cook for 40 minutes; drain. Add Italian dressing and cool. Add remaining ingredients. Refrigerate overnight on for 24 hours. Serve at room temperature either as is on halves or slices of avocado on a bed of lettuce. To use as a dip, mash to thicken.

I just grabbed this off of the internet, but it's a common holiday staple in Texas.

SPAGHETTI STUFFING


Saute in butter or margarine:
chopped onion
chopped celery
diced green pepper
fresh or dried parsley flakes

After these have sauteed a bit, add:
sliced mushrooms

Add diced hard boiled eggs

Saute until lightly brown and add to cooked spaghetti. Continue to heat until vegetables have blended with cooked spaghetti (about 20 minutes).

Turkey can be stuffed with recipe, and whatever is left over can be put in a casserole dish.


As gross as it might sound to most, it's actually really good, smothered in brown gravy..
I grabbed this off the net as well, I'm not the stuffing cooker in this house.. My wife's family does this, they claim it's Hungarian but I think it's a Tempe Az thing..

Pumpkin Pie

I tried this out around Halloween, I messed up a little on cooking the crust... Forgot to fill the shells with something that would weigh down the parchment paper. Somehow it still turned out delicious. The recipe can easily make 2 pies (ours were gone within 2 days). Enjoy!
