I'm not sure about the triad really. I know there's a nice place in Greensboro I believe. There are TONS of trails down towards Charlotte. My favorite is at Lake Norman State Park north of Charlotte. Great trails and are kept up very nicely

Battleground Military Park, Battleground Ave and New Garden Rd.
Go East on New Garden to stop sign or stop light. Left, will be on right.
--I used to ride off trail/off road in the '90s.--

Lawndale Blvd just north of town--Lake Trails can be ridden or walked.

High Point City Lake Park, entrance on High Point/Jamestown Rd., Jamestown.

If ya desire extreme challenges, venture to Asheville, Pisgah National Forest, Blue Ridge Parkway, Shenandoah Parkway (Va.), Hanging Rock.

Drive west a little! Try Salem Lake in Winston-Salem. Seven mile wide gravel trail goes around the entire lake. Very nice and for the most part smooth riding.
