Injecting a boston butt

I just picked up a boston butt and will try the injection method in the next few days, when the wind stops blowing. I will let you know how it wend.

Although I'm a western NCer at heart you can't beat the eastern style BBQ. King's BBQ in Kinston, NC is awesome.

Results of Injection B4 Smoking a Boston Butt

I took about a 7 pound Boston Butt and injected it B4 smoking with about 2 cups of BBQ sauce. Smoked for about 18 hours...Unbelieveable...Really moist and with a wonderful flavor already on the inside. This is my best one yet.

The life long BBQ debate is always one that will never die down. I am a SC transplant and have been here in NC for 12+ years and still cant get used to NC BBQ. I am a big fan of Earl Dukes BBQ and their sauce. It's always a tradition in our family that anybody that goes south has to bring back extra sauce for all of us.

Western FTW

Eastern is OK sometimes but tends to be to dry and always the vinigar seems to be a sour rather than a sweetish flavor.
