Logan Canyon up to Bear Lake is fun. Nebo Loop is pretty cool I hear. Canyonlands, Moab, Arches, etc in the south would be amazing on a bike.

Utah weather is tricky to predict. Generally speaking April - Memorial Day weekend are pretty safe, but avoid the week of Easter unless you want to be in the middle of the yearly Jeep Safari....

Within an hour or 2 of Moab... that will limit you to some pretty small towns. Not to say small towns aren't great (I live in one, but 3 hours from Moab :) ) but of course opportunities are limited....
