Hefeweizen All Grain Recipe NEEDED!

I'm ready to brew a beer for the spring and need a great Wheat beer all-grain recipe. Anyone have a favorite recipe that they use and are willing to share?

Here's my last version. pretty simple really. Turned out great, just finished that keg the other day.


Ingredients
--------------------------------------------------------------------------
5.5 lbs. American 2-row
5 lbs. White Wheat Malt
.25 lbs. Crystal 60
0.35 lbs. Rice Hulls
0.5 oz. Tettnanger (Pellets, 4.5 %AA) boiled 60 minutes.
0.5 oz. Saaz (Pellets, 5 %AA) boiled 15 minutes.
Yeast: WYeast 3068 Weihenstephan Weizen

Original Gravity: 1.050
Terminal Gravity: 1.012
Color: 6.35 SRM
Bitterness: 13.4 IBU
Alcohol (%volume): 5.0 %

I have brewed this one twice and served it at beer events, it went over quite well.

5.6lbs pilsener malt
5.6lbs wheat malt
.08oz Hallertau 4%AA 60min
wlp300 or wyeast 3068 with appropriate starter and ferment at 62? F
and carbonate to 2.5 volumes of co2

OG: 1.050
FG: 1.012
IBU: 13
Color 5SRM
ABV: 5%
Boil 60 minutes
Pre-boil volume 7 gallons
Pre-boil gravity 1.043

If you want the ladies to love you add one small bottle of coconut extract from wal-mart at kegging, they LOVE it. Trust me!

Those both look great. I guess I need to go buy some coconut extract! I've never tried that but I'm sure it will add a nice touch. Thanks for the recipes.

Anyone done a peach Hefe? Thinking about trying one, ala Son of Peach from RJ Rockers

I have tried fruit puree, fresh fruit, dehydrated fruit and fruit extract and the only one I have had sucsess with is the extract. I have heard of taking fresh fruit that you like the taste of and freezing then adding to end of fermentation with good results but I have not tried that yet.
