You may want to get in touch with the owner of Port Washington Brewery. He got in some tax trouble with the city and had to shut down, but has lots of experience running both a microbrewery and bar.

Yeah Hops Haven was the bar, great beer and a great brewmaster.
His name is Jeff if you can look him up. Recommended!
